Ohio Chicken Corn Club

A delicious and hearty sandwich using lots of great produce found at the Pearl Market!


  • Four chicken breasts
  • 1 lb bacon
  • Brioche buns
  • Lettuce
  • Tomatoes (Heirlooms work very well)
  • Sweet Corn Crema (recipe below)
  • Kale & Corn Relish (recipe below)
  • Spicy Tomato Jam (recipe below)

DIRECTIONS: Layer ingredients on bun with Spicy Tomato Jam on lower half of bun, Sweet Corn Crema on top bun and Kale & Corn Relish on top of chicken.

Sweet Corn Crema

  • 1 cup Grilled Corn
  • 8 oz. Sour Cream
  • ¼ cup Chopped Cilantro
  • 1 teaspoons Lime Juice
  • Salt & Pepper to taste

Place all ingredients in to a mixing bowl.  Stir until

well combined season with salt & pepper.

Kale & Corn Relish

  • 1 Bunch Curley Kale, Chopped
  • 1 cup Cherry Tomatoes, Cut in Half
  • ½ cup Red Onion, Chopped
  • 1 cup Grilled Corn

Place washed and chopped kale in a large mixing bowl.  Add tomatoes, red onion, corn & lemon juice.  Toss ingredients and season with lemon juice and salt and pepper.

Spicy Tomato Jam

  • 1 ½ lb. Tomatoes, Chopped
  • 1 cup White Sugar
  • 2 tablespoons Lime Juice
  • 1 teaspoons Ground Ginger
  • ½ teaspoons Ground Cumin
  • ¼ teaspoons Ground Cinnamon
  • ¼ teaspoons Crushed Red Pepper Flakes

In a heavy bottom sauce pot add all ingredients.  Bring to a boil and reduce heat to low.  Simmer for 1 hour, making sure to stir often to avoid burning.  Remove from heat and allow to cool. Season with salt and pepper.
